Suzi Unwin, a former pastry chef of Jocelyn’s Provisions, Dello Mano and Nodo, has launched online shop Bella & Tortie producing artisan canelés and cakes in commercial kitchen Wandering Cooks, for order for delivery around Brisbane.
Noticing a decline in integrity and technique within the baking world, Suzi decided to focus on the centuries-old classic, the humble canelé, and reintroduce it to the Brisbane market with contemporary styling. Suzi is a former interior designer, therefore she has a keen eye for detail, and this creative flair is not only evident in her products but the packaging and website as well.
Canelés are a beautiful and unique pastry with origins in Bordeaux, France. A notoriously difficult bake, they have a crisp, caramelised outer shell and a velvety custard interior and are a textural delight. Bella & Tortie offers a variety of flavours from the original rum and vanilla to tangy passionfruit, salted caramel & raspberry, chocolate or matcha. Using local, ethical ingredients in all their bakes, Suzi said they support other small businesses where possible. “We are so proud of our suppliers and use Cultur’d handcrafted butter from Byron Bay, Maleny Dairies milk, farm free range eggs, The Steepery Tea Co pure leaf tea products, Bee One Third honey & beeswax, Madagascar vanilla beans and Valrhona Chocolate,” she said.
