Cheese connoisseur and founder of Brisbane’s Emile & Solange Sarah Thuillet swears by pairing cheese with tea, teaming up with Kym Cooper from The Steepery Tea Co to host a Tea and Cheese Pairing Night on Tuesday 5 June.
This event will allow guests to enjoy a night of exploration and sample unexpected flavours in a relaxed atmosphere at Shawty’s Espresso in Woolloongabba, with Sarah and Kym presenting a menu laden with creamy cheeses and indulgent teas. “Kym and I have combined our knowledge of cheese and tea to create an evening that allows our guests to get acquainted with flavour combinations they may never have thought of, ” said Sarah.
Kym says that tea has an incredible diversity and more similarities to the wine world than many realise. “It is an agricultural product affected by ‘terror’ and the skill of the tea makers to create a fine tea, but what makes tea pair perfectly with cheese is the introduction of the hot infusion,” she said.
It is the warming of the mouth from the tea, followed by the cheese softening or melting that can draw out subtle notes in the cheese or tea that might be undetectable otherwise. Both Sarah and Kym will guide their guests through five carefully curated fine tea and cheese pairings, ensuring a memorable culinary experience.
